Kountry Boys Pork &amp; Beef Sausage<br />1 tablespoon corn oil<br />6 oz. chopped onion<br />1 large chopped jalapeno<br />1 large chopped tomato<br />1 chopped garlic clove<br />1 can 20 oz. pinto beans<br />3 tablespoons chopped cilantro<br />1 cup water<br /> <br />In a small pot (medium heat) add the corn oil, then add sausage, chopped onion, jalapeno, tomato and garlic.  Cook for five minutes, stirring as needed.  Then add the pinto beans, chopped cilantro and the water.  Cover and cook for 10 minutes on medium - high heat. <br /> <br />Preparation &amp; Cook Time:  25 minutes<br />Yields 5 servings of approx. 8 oz. each.</p>

<p>Here's a tangy sausage and sauerkraut dish your family will enjoy. Serve this sauerkraut dish with hot baked biscuits or crusty rolls. I like this dish a little sweet, but feel free to cut back on the sugar to suit your own taste.<br />Ingredients:</p>

<ul>
<li> 1 large onion, quartered and sliced</li>
<li>2 tablespoons vegetable oil</li>
<li>2 large apples, peeled, cored, and diced</li>
<li>2 cups apple juice</li>
<li>1 tablespoon vinegar</li>
<li>4 tablespoons light brown sugar</li>
<li>2 pounds cold pack sauerkraut, rinsed and well drained</li>
<li>2 pounds Kountry Boys smoked sausage</li>
<li>1/4 teaspoon ground black pepper</li>
<li>1 teaspoon of caraway seeds, or to taste, optional</li>
</ul>
<h2>Preparation:</h2>
<p>Heat oven to 425°.</p>
<p>In a large ovenproof saute pan or Dutch oven over medium heat, saute the onion and sliced sausages in vegetable oil until onion is golden and sausage is lightly browned, about 5 to 7 minutes. Add the apples and saute for 1 minute longer. Add apple juice, vinegar, brown sugar, sauerkraut, and pepper. Add caraway seeds, if using. Cover and bake for 1 hour. Serve with crusty rolls or biscuits and a tossed.</p>
